The Bodega (winery) Pago de Tharsys is a family business that dates back to the year 1808. It is located in the province of Valencia, on the east coast of Spain. The operation is still managed by the oenologist and managing director Vicente García Ana Suria. You look at twelve hectares, located up to 650 meters in height. The vines grow on limestone and sandy soils with little organic matter, which can penetrate the roots of the vines well. The warm, continental climate influenced by the Spanish east coast brings temperature fluctuations of up to 20 ° C between day and night with them – excellent conditions for optimum maturity stage.

The acreage of the bodega Pago de Tharsys belong to the DO appellation Utiel-Requena, in the famous Cava sparkling wines may be produced. Planted especially in the Merlot, Cabernet Franc, Bobal, Albariño and – as typical for Spain – Tempranillo. All these varieties have one thing in common: their grapes are always harvested at night. The reason lies in the low temperatures. At about 12 to 13 ° C the enzyme activity in the grapes remains to a minimum, so that all their organoleptic potential remains.

In this way, the complex, fruit-shaped and elegant wines from Pago de Tharsys inspire the experts – especially the Cava sparkling wines. The Brut Nature was elected in 2005 as the Enoforum in Madrid as the best Cava in Spain. In wine production by Pago de Tharsys; both traditional methods and the latest technology, but they never want to engage in the process as far as it would distort the natural flavor of the wine.

Cava, made by the Champagne method, is a very acceptable alternative to French champagne and, it should be said, much better value for money.
